Ice Cream – Strawberry Parfait

Parfait is a French word meaning “perfect”. In English, it has several meanings:

  • French parfait, frozen custard made with cream, and usually with a fruit puree
  • American parfait, a tall glass filled with ice cream, layered with various syrups, topped with whipped cream and a cherry

Here is a simple way on how to make strawberry parfait:

Ingredients:

  • 3 scoops strawberry flavor ice cream
  • whipped cream
  • strawberry syrup
  • crushed pineapple
  • chopped peanuts
  • maraschino cherries

Procedures:

  1. In a tall glass, squirt strawberry syrup on sides.
  2. Place scoops of ice cream on top of each other.
  3. Top the ice cream mound with whipped cream.
  4. Put a spoonful of crushed pineapple, sprinkle with nuts and top with cherry.
  5. Squirt some strawberry syrup on top.
  6. Serve.

Escarole Soup with Turkey Meatballs Recipe

Ingredients:

  • 1 pound ground turkey
  • 2 eggs, beaten to mix
  • 1 clove garlic, minced
  • 1 small onion, minced
  • 1/2 cup dry bread crumbs
  • 1/2 cup grated Parmesan
  • 1/2 cup chopped fresh parsley
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon fresh-ground black pepper
  • 3 tablespoons olive oil
  • 1/2 head escarole (about 1/2 pound), leaves washed well and chopped (about 1 quart)
  • 1 1/2 quarts canned low-sodium chicken broth or homemade stock
  • 2 cups water
  • 2 tablespoons red wine vinegar or white wine vinegar
  • 1/4 teaspoon red pepper flakes

Procedures:

  1. In a medium bowl, mix together the turkey, eggs, garlic, onion, bread crumbs, Parmesan, parsley, 1/2 teaspoon of the salt, and the black pepper until thoroughly combined. Shape the mixture into twenty meatballs.
  2. In a large frying pan, heat 11/2 tablespoons of the oil over moderate heat. Add half the meatballs to the pan and cook, turning, until browned on all sides, about 3 minutes. Remove the meatballs from the pan and drain on paper towels. Repeat with the remaining 11/2 tablespoons oil and the rest of the meatballs.
  3. Put all of the meatballs, the escarole, broth, water, vinegar, red-pepper flakes, and the remaining 1 teaspoon of salt in a large pot. Cover and bring to a simmer over moderate heat, stirring occasionally. The meatballs should be cooked through by the time the broth comes to a simmer.

Ice Cream – Banana Split

A Banana Split is an ice cream-based dessert originally invented by a 23-year-old apprentice pharmacist, who enjoyed inventing sundaes at the store’s soda fountain. He invented the banana-based triple ice cream sundae in 1904. A year or two later, historians say, a Boston ice cream entrepreneur came up with the same sundae, with one minor flaw — he served his banana splits with unpeeled bananas until he discovered that ladies preferred them peeled.

Here’s a simple way to make a banana split:

Ingredients:

  • 1 banana, cut lengthwise
  • 1 scoop each vanilla, chocolate and strawberry ice cream
  • chocolate syrup or strawberry syrup
  • whipped cream
  • chopped nuts
  • crushed pineapple
  • maraschino cherries

Procedures:

  1. In a boat dish, place the sliced banana on both sides.
  2. Place scoops of ice cream in a row between banana slices.
  3. Squirt chocolate syrup or strawberry syrup on top of the ice cream.
  4. Top each mound with whipped cream.
  5. Put a spoonful of crushed pineapple and sprinkle with nuts and top each with a cherry.
  6. Serve.

Garlic and Cheese Crostini Recipe

Garlic and Cheese Crostini

Ingredients:

  • 24 (1/3-inch-thick) baguette slices (from a baguette at least)
  • 1/4 cup olive oil, divided
  • 3/4 cup finely grated Pecorino Romano (preferably imported)
  • 5 large garlic cloves, minced
  • Kosher salt
  • 2 tablespoons finely chopped flat-leaf parsley

Procedures:

  1. Preheat oven to 350°F with rack in middle.
  2. Arrange bread slices in 1 layer on a large baking sheet and brush tops with 3 tablespoons oil.
  3. Stir together remaining tablespoon oil, cheese, garlic, 1/4 teaspoon kosher salt, and 1/4 teaspoon pepper in a small bowl. Sprinkle each slice with about 1 teaspoon cheese mixture, mounding it slightly.
  4. Bake until topping just starts to melt, 6 to 8 minutes. Sprinkle with parsley and kosher salt to taste.
  5. Serve warm.

Batchoy (Tagalog Version) Recipe

Ingredients:

  • 1/2 kilo lomo (pork loin), sliced to strips
  • 1 to 2 pcs. pork kidney, sliced to strips
  • 1 small packet misua noodles
  • 2 thumb size ginger, cut into strips
  • 2 large size sayote, sliced
  • 1/2 head garlic, chopped
  • 1 medium size onion, chopped
  • 1/2 tsp. peppercorns crushed
  • 1 bundle dahon ng sili, chili leaves
  • 1/4 cup patis, fish sauce
  • 3 siling haba
  • cooking oil
  • salt

Procedures:

  1. In a casserole, heat oil then sauté garlic, onion and ginger.
  2. Add pork and kidney strips. Cook for 2-3 minutes or until brown.
  3. Add in 8-12 cups of water and peppercorns and fish sauce. Bring to boil.
  4. Add in sayote and simmer until just cooked and firm.
  5. Add in the misua noodles, siling haba, chili leaves and salt to taste. Simmer.
  6. Serve hot.

Chicken Caesar Salad Recipe

Ingredients

  • 1 tbsp olive oil
  • 1 thick slices white bread, crusts trimmed and cut into small cubes
  • 1 chicken breast, cut into bite size
  • 1 baby gem lettuce, or half a Cos or Romaine lettuce, cut into pieces
  • 1 tbsp freshly grated parmesan
  • 1 egg, sliced (optional)

Dressing Ingredients:

  • 2 tbsp mayonnaise
  • 1 tbsp freshly grated parmesan
  • 1 tsp lemon juice
  • 1/2small clove garlic, crushed
  • 1/8 tsp Dijon mustard
  • few drops Worcestershire sauce
  • few drops tabasco

Procedures:

  1. Heat the olive oil in a non-stick frying pan and add the cubes of bread. Fry until golden brown. Remove and drain on kitchen paper.
  2. Place the chicken into the pan. Fry until cooked and leave to cool.
  3. Combine the dressing ingredients. Mix well.
  4. Add the lettuce and chicken and toss with most of the dressing.
  5. Scatter over the grated Parmesan cheese, the croutons and drizzle with the remaining dressing.
  6. Serve.

Paella Recipe

Paella comes from Valencia, a province from Spain. The name Paella comes from the word “Paellera” – a flat round pan. Paella originally began as hearty fare for laborers. It was cooked on open wooden fires and eaten off the pan.

This delicious and healthy dish was cooked over a low fire and blended with herbs. The dish should not be stirred as it cooks. This is to let the rice is absorb the liquid slowly. The best part is the crispy layer that is found at the bottom of the pan. Use shrimp, clams, spicy chorizo and chicken.

The Spanish Paella also has a version that works well with vegetarians; healthy veggies and artichoke hearts, and
generously spiced with paprika and turmeric.

Ingredients:

  • 2 1/2 cups rice
  • 5 boneless chicken breasts
  • 10 tiger prawns
  • 350 gms squids, cut as rings
  • 100 g chorizo, sliced
  • 6 slices pancetta (streaky bacon)
  • 1 finely chopped onion
  • 4 cloves finely minced garlic
  • 2 liters chicken stock
  • 1 pinch saffron
  • 1 tsp smoked paprika
  • parsley, chopped
  • 1 cup peas
  • salt and pepper to taste
  • olive oil
  • flour

Procedures:

  1. Dust chicken pieces in flour after seasoning. Fry them until golden brown. Keep aside.
  2. Heat oil in a pan. Sauté sliced chorizo and bacon till crisp brown.
  3. Add onion and garlic and continue to sauté.
  4. Cook the rice in half the stock infused with smoke paprika and saffron till nearly done.
  5. Add the remaining stock, prawns and peas and sautéed ingredients and cook.
  6. Add the chicken and garnish with chopped parsley.
  7. Serve with a wedge of lime.

13th Tour Of The FireFlies

Your eKusinero joined this year’s Tour of the Fireflies which according to the organizer expected 12,000 participants from different parts of the country. This is a yearly event organized by the Firefly Brigade which promotes bicycle for clean air and sustainable means of transportation. The tour passes through 6 Metro Manila cities in an easy and controlled pace that allows everyone (children and senior people) to participate and enjoy the ride.

I joined this year’s tour to support the group’s cause and to enjoy one of my hobby which was mountain biking and of course to meet new friends and see different kind of bikes.

Lechon Paksiw Recipe

Ingredients:

  • 2 kilos of lechon leftover , sliced
  • 2 tbsp. oil
  • 1 whole garlic head, sliced
  • 6 cups liver sauce
  • 2½ cups water
  • 2 tbsp sugar
  • ½ cup vinegar

Procedures:

  1. Carefully remove the bones from the lechon or you may prefer to leave the bone intact as i do.
  2. In a large casserole, heat oil and sauté garlic until golden brown.
  3. Add the (deboned) lechon slices. Mix in liver sauce, water and sugar. Mix well.
  4. Add vinegar and let it simmer without stirring.
  5. Taste a teaspoon of the simmering sauce and adjust to your taste preference.
  6. Simmer until sauce is slightly thick.
  7. Serve hot with cooked rice.

Unusual Uses of Baking Soda

Baking soda is a chemical compound that appears as a fine powder. It releases bubbles of carbon dioxide when it interacts with an acid and a liquid. It is most commonly used in baking, where it acts as a leavening agent. However, there are other unusual uses of baking soda which can help in our cooking and kitchen works.

Here are some practical and unusual kitchen tips of using baking soda:

  • Always keep a box of baking soda by your stove. In case of stove fire, scatter the powder by the handful to safely put it out.
  • Clean vegetables and fruits by sprinkling in water, soak and raise the produce.
  • Wash garbage cans with baking soda to remove odors.
  • Clean your fridge and freezer with dry baking soda sprinkled on a damp cloth and rinse with clear water.
  • Deodorize your fridge and freezer by putting in an open container of baking soda to absorb odors. Stir and turn over the baking soda from time to time. Replace every 2 months.
  • Wash plastic, porcelain, glass, thermos bottles and cooling containers with baking soda and water.
  • Clean marble, formica counter tops or plastic surfaces with baking soda on a damp sponge.
  • Wash glass or stainless steel coffee pots (but not aluminum) in a baking soda solution ( 3-tablespoons soda to 1 quart water).
  • Run your coffee maker through its cycle with a baking soda solution then rinse.
  • Sprinkle baking soda on barbecue grills, let soak then rinse off.
  • For silver pieces without raised patterns or cemented-on handles: place the silver on aluminum foil in an enamel pot. Add boiling water and 4 tablespoons baking soda. Let stand, rinse and dry.
  • Run your dishwasher through its cycle with baking soda instead of soap to give it a good cleaning then reduce odor build-up by sprinkling some baking soda on the bottom.
  • To remove burned-on food from a pan, soak the pan in baking soda and water for 10 minutes before washing, or scrub the pot with dry soda and a moist scouring pad.
  • For a badly-burned pan with a thick layer of burned-on food, pour a thick layer of baking soda directly onto the bottom of the pan then sprinkle on just enough water so as to moisten the baking soda. Leave the pot overnight then scrub it clean next day.
  • Rub stainless steel and chrome with a moist cloth and dry baking soda to shine it up, scrubbing in the direction of the grain. Rinse and dry.
  • Keep your drains clean and free-flowing by putting 4 tablespoons of soda in them each week. Flush the soda down with hot water.
  • To remove strong odors from your hands, wet your hands and rub them hard with baking soda, then rinse.
  • To scald chicken easier, add 1-teaspoon of baking soda to the boiling water. The feathers will come off easier and flesh will be clean and white.
  • To make dried beans more digestible, soak in water with baking soda.
  • To remove the gamey taste from wild games, rinse with water and baking soda solution.
  • To remove melted plastic bread wrapper from toaster, dampen cloth and make a mild abrasive with baking soda.
