  • 4 tbsp oyster sauce
  • 6 tbsp soy sauce

  1. Brown garlic into oil.

Teriyaki Sauce Recipe

Teriyaki Sauce can be used as marinade for chicken, beef or fish. For fish fillet, use this sauce to marinate and then charcoal grill. If the sauce will be used for basting grilled meats, reduce the sauce by cooking in high heat until thickened.

Ingredients:

  • 1 cup rice wine or sake
  • 1 cup Japanese soy sauce
  • 2 tbsp Dashi powder
  • 1 tbsp brown sugar
  • 1/4 cup ginger juice

Procedures:

  1. In a saucepan, warm the rice wine over medium heat. Ignite wine and shake until flame dies.
  2. Add the remaining ingredients. Bring to a boil.
  3. Cool to room temperature.

Knife Safety

  • Use a proper grip
  • Place fingers of guiding hand in proper position
  • Always cut on a cutting board
  • Stabilize the cutting board with damp towel or gripmate
  • Do not place knife in sink. Clean by hand immediately and store properly.
  • When cleaning blade, always wipe blade from dull side

Safety Rules

  • Keep your mind on what you are doing
  • Do not distract others who are using a knife

Knife Usage

Grip the handle in one of the following ways:

  • 4 fingers, holding the thumb against the side of the blade
  • 3 fingers, index finger resting flat against one side of blade and thumb on opposite side
  • 4 fingers, thumb firmly against the blade's back

Guiding hand is the hand not holding the knife:

  • Form a claw on the table top with the guiding hand, thumb tucked inside the four fingers

Move the knife through the product with a downward and forward motion, being careful to cut fully through the item.

Stuffed Chicken Recipe (Chicken Relleno)

STUFFED CHICKEN RECIPE

A “stuffed chicken” or “rellenong manok” is a famous chicken recipe usually prepared during Christmas or New Year celebration.

“Stuffed Chicken” or “Rellenong manok” is a chicken recipe stuffed or filled with different ingredients that is tasty, colorful and delicious.

Deboning chicken is the hard part but you can have it deboned in the supermarket or in the place where you buy the chicken. Just add extra fee for deboning.

Ingredients:

  • 1 piece boneless whole chicken (1 to 1.5 kilo)

Chicken Marinade:

  • 3 cloves garlic
  • 1 tbsp sugar
  • 3 tbsp soy sauce
  • lime juice

Stuffing:

  • 500 gms. ground pork or chicken
  • 1 pc onion, chopped
  • 2 to 3 slices of age old bread or grocery bread, cut into small pieces
  • 3 pcs. hard boiled eggs
  • melted butter
  • 1 stalk celery, finely chopped
  • 1 small carrots, chopped
  • salt and pepper to taste

Optional Stuffing:

  • Mushrooms, chopped
  • Sausage cooked and chopped
  • Raisins
  • Apple, raw, chopped
  • Walnuts, chopped
  • Parsley

Procedures:

  1. Clean the whole chicken. Pat it dry with a clean towel.
  2. Mix calamansi or lemon juice, soy sauce, finely minced garlic and sugar in a small bowl. Marinate the whole chicken with these ingredients inside and outside for 3 hours.
  3. Mix the stuffing ingredients in a large bowl excluding the hard boiled eggs.
  4. Insert the stuffing inside the chicken, arranging the hard-boiled eggs down the center then add more stuffing on top of the eggs.
  5. Sew the chicken by using a big and new needle with a thick thread.
  6. Wrap the whole stuffed chicken using an aluminum foil. Heat the oven at 350 degrees F and bake the stuffed chicken breast-up for an hour. Open the foil and rub the outer portion of the whole chicken with olive oil or butter. After an hour in the oven, turn the whole chicken over and wait until the chicken turns golden brown.
  7. Remove the thick thread then slice it into half. Place the whole chicken filled with stuffing into a large serving platter.
  8. Serve hot.

Chocolate Peanut Butter Ice Cream Sandwich Cake Recipe

Ingredients:
  • 2/3 cup  PLANTERS Crunchy Peanut Butter, divided
  • 1/2 cup  cold milk
  • 1 pkg.  (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
  • 1 tub  (8 oz.) COOL WHIP Whipped Topping, thawed, divided
  • 12 vanilla ice cream sandwiches
  • 2 Tbsp.  chopped PLANTERS Dry Roasted Peanuts
Procedures:
  1.  Whisk 1/2 cup peanut butter and milk in medium bowl until blended. Add dry pudding mix; beat 2 min. Stir in 1 cup COOL WHIP.
  2. Arrange 4 ice cream sandwiches, side-by-side, on 24-inch-long sheet of foil; top with half the pudding mixture. Repeat layers. Top with remaining sandwiches.
  3. Mix remaining peanut butter and COOL WHIP until blended; spread onto top and sides of dessert. Wrap foil loosely around dessert.
  4. Freeze 4 hours or until firm. Top with nuts before serving.

PREPARING BUTTERED BEANS AND CARROTS

This is one of the vegetable dish i like. This is very easy to prepare and so simple yet tasty and delicious. Simply pan fry the garlic, add the butter — a tsp of olive oil then add carrots, beans and a fair amount of pepper.

Ingredients:

  • 1/4 kilo green beans
  • 2 pc. carrots, slice
  • 1 cup corn, whole (optional)
  • 1/4 slice Butter
  • salt and pepper
  • olive oil
  • 3 cloves garlic, chopped

Procedures:

  1. Trim green beans and slice carrots into sticks.
  2. Steam beans and carrots till medium done.
  3. In a pan, heat oil then saute garlic till medium brown.
  4. Add butter then toss in vegetables and corn.
  5. Stir for a few minutes till mixtures are coated with butter.
  6. Season with salt and pepper. Serve hot.

Light Vegetable Salad Recipe

Ingredients:

  • 1 cucumber, chopped
  • 2 fresh tomatoes, chopped
  • 2 green onions, minced
  • 1 red bell pepper, chopped
  • 1 small jicama, peeled and julienne
  • 5 romaine lettuce leaves, torn
  • 1 clove garlic, minced
  • 1 1/2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tbsp pomegranate syrup
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 tsp chopped fresh dill
  • 1 tsp chopped fresh basil
  • 1 1/2 tsp water

Procedure:

  1. Toss together cucumber, tomatoes, onion, bell pepper, jicama and lettuce in a large salad bowl.
  2. In a small bowl, whisk together garlic, lemon juice, olive oil, pomegranate syrup, salt, pepper, dill salt and water.
  3. Drizzle dressing over the salad just before serving.

Ingredients:

  • 5 eggs
  • 1 cup chopped shrimp
  • 1 cup shredded onion
  • 1/4 cup chopped water chestnuts
  • 1/4 to 1/2 cup fresh bean sprouts
  • 1/2 cup thinly sliced mushrooms
  • 2 tablespoons soy sauce

Procedures:

  1. Beat eggs until thick. Add shrimp, onions, water chestnuts, bean sprouts, mushrooms, and soy sauce to eggs and continue beating.
  2. Heat small amount of oil in a heavy shallow pan. Carefully ladle shrimp mixture into pan the size of a medium pancake. Cook until brown and then turn.
  3. Serve with Sauce.

Sauce:

  • 2 tablespoons cornstarch
  • 2 tablespoons soy sauce
  • 1 can beef bouillon
  • 1/2 teaspoon granulated sugar

Procedures:

  1. Mix ingredients and cook until slightly thickened, stirring constantly.
  2. Serve over Shrimp Foo Yung.

Spicy Tuna Spaghetti Recipe

SPICY TUNA SPAGHETTI RECIPE

Ingredients:

  • 500 g spaghetti noodle
  • 3 cans Tuna (Hot & Spicy)
  • 6 pc hotdog, thinly sliced
  • 2 cans tomato sauce
  • 1 can tomato paste
  • 1 pc carrots, diced
  • 2 pc tomato, finely chopped
  • 1 can mushroom
  • 1 onion, diced
  • 3 cloves garlic, diced
  • 2 tbsp seasoning
  • 2 tbsp parsley
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 cup grated cheese

Procedures:

  1. Cook the spaghetti noodles according to package directions. Drain and toss with oil.
  2. In a large skillet, heat oil and add the onion and garlic. Cook over medium heat until brown.
  3. Add the tomatoes, carrots and mushrooms. Stir slowly and pour about a cup of water and bring to boil.
  4. Add the tuna and hotdog. Put salt and pepper to taste. Simmer.
  5. Add the tomato sauce and tomato paste and bring to a soft boil.
  6. Adjust seasoning. Lower the heat and simmer for a few minutes.
  7. Pour the sauce over the pasta and top with cheese and parsley.
  8. Or Toss the pasta and sauce together and top with cheese and parsley.
