How to make a Frappuccino?

PREPARING FRAPPUCINO

Frappuccino is a registered trademark of Starbucks and is the name of a blended ice beverage which is sold in every Starbuck’s store. It is also sold in the form of a bottled coffee beverage in stores across the US.

Here’s a simple way of making Frappuccino;

Ingredients:

  • 1 tsp sugar
  • 1/4 tsp dry pectin
  • 1/4 cup cold 2% milk
  • 3/4 cup espresso coffee

Flavors:

  • 1 tsp unsweetened cocoa
  • 1 tbsp of liquid coffee flavoring (vanilla, hazaelnut, almond, raspberry, etc)
  • 1 tsp liquid baking flavoring (cinnamon, praline, etc..)

Preparations:

  1. In a blender, add 3/4 cup of coffee and mix with sugar for 30 seconds at low speed to get a fair amount of froth.
  2. While blending, add the cold milk and other ingredients.
  3. Blend for 1 minute and serve!

Lechon Kawali Recipe

Lechon Kawali is one of the most popular pork dish in the Philippines. It is a pork belly boiled in water with spices, drained then deep fried until crisp and golden brown. For me, best dip sauce is a mixture of soy sauce, vinegar, onions and red hot chili. Oohh, I love it!

Ingredients:

  • 1 kilo pork belly
  • 1 pc. onion, quartered
  • 10 pcs. peppercorn
  • 1 stalk celery
  • 1 tsp salt
  • cooking oil

Sauce:

  • 3 tbsp soy sauce
  • 5 tbsp vinegar
  • 1 onion, minced
  • 1 garlic clove, minced
  • 1/2 tsp sugar
  • 1 to 2 pcs chili (optional)

Procedures:

  1. Prepare the pork belly by scraping the skin with a knife. Wash thoroughly.
  2. Place in a deep stock pot with salt, peppercorn, celery and onion. Boil until tender.
  3. Remove from the pot and drain. Refrigerate for a few hours.
  4. In a deep frying pot, heat the cooking oil and deep fry the pork until golden brown.
  5. Serve hot together the mixed sauce.

COOKING CALAMARES (SQUID)

Ingredients:

  • 1 kg squid, cut into rings
  • 1/2 kg (about 4 cups) flour
  • 1 liter (4 cups) olive oil
  • 1/2 tsp cayenne pepper
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 2 eggs, beaten

Procedures:

  • Clean the squid by removing the heads, tentacles, ink bags, fins and skin. Wash them thoroughly under running water, drain them.
  • Cut the squid into 5 mm 1/4 inch rings. Set aside.
  • In a large saucepan or deep fryer, heat oil. If you have a thermometer, heat the oil to 180C/350F.
  • While the oil is heating, mix the flour, cayenne, paprika and salt in a large bowl.
  • Drop in the individual pieces of squid and coat thoroughly with the flour mixture.
  • Dip the floured squid into the beaten egg and then carefully drop into the hot oil.
  • Fry for 2-3 minutes until golden.
  • Remove from the oil and briefly drain on paper towels before serving with the garlic and lemon mayonnaise.
  • Serve hot.

BERRY BEST SALAD RECIPE

Ingredients:

  • 1/4 cup orange juice
  • 1 tablespoon salad oil
  • 2 teaspoons honey mustard or Dijon-style mustard
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 4 cups torn lettuce
  • 1-1/2 cups fresh blueberries, raspberries, quartered strawberries, and/or canned mandarin orange sections, drained
  • 2 tablespoons bite-size cheddar fish-shaped or pretzel crackers or 1 tablespoon shelled sunflower seeds

Procedures:

  1. For dressing, in a screw-top jar combine orange juice, oil, mustard, sugar, and salt. Cover and shake until combined. Place lettuce in medium bowl. Drizzle with dressing; toss to coat. Divide lettuce among 4 plates.
  2. Arrange fruit on lettuce. Sprinkle with crackers. Serve immediately. Makes 4 side-dish servings.

Ingredients:

  • 3 tbsp cooking oil
  • 3 cloves garlic, minced
  • 1 small onion, minced
  • 3 medium tomatoes, sliced
  • 1/2 kg chicken, cut into serving portions
  • salt and pepper to taste
  • 2 medium sweet potatoes, quartered
  • 1 medium carrot, peeled & sliced into 1/4 inch- rounds
  • 100 g chicharo or Baguio beans
  • 1 head cabbage, sliced
  • 1 small pack tomato sauce

Procedures:

  1. Heat cooking oil and sauté garlic, onions and tomatoes.
  2. Add chicken, seasonings to taste and 4 cups water.
  3. Bring to boil; lower heat. Simmer for 15 minutes, then add potatoes and carrot.
  4. Add tomato sauce and continue simmering until cooked, adding beans and cabbage last.
  5. Sprinkle top with spring onions just before serving.

Caesar Salad Recipe

CAESAR SALAD RECIPE

Ingredients:

  • 1 head romaine lettuce
  • 2 cloves garlic
  • 2 anchovy fillets (optional)
  • 2 fresh egg yolks
  • 1/2 cup olive oil
  • 2 tbsp fresh lemon juice
  • 2 oz. parmesan cheese, grated
  • salt and pepper to taste
  • 3 slices sandwich bread
  • 3 tbsp butter

Procedures:

  1. Trim, wash and dry the lettuce. Tear large leaves into pieces.
  2. Peel and mince the garlic. Chop the anchovy fillets finely. Place the egg yolks in a bowl.
  3. In a mixing bowl, slowly add the oil in a thin stream until thick and creamy.
  4. Stir in lemon juice. Stir 1/2 of the garlic, 1/2 of the parmesan cheese, the anchovy and season with salt and pepper.
  5. Put the lettuce in a large bowl. Add the dressing and toss well.
  6. Arrange the salad in a serving plate.
  7. Remove the crust from the bread and cut into small dice.
  8. In a skillet, heat the butter over medium heat. Add the bread cubes and saute until golden brown. Add the remaining garlic and saute briefly.
  9. Sprinkle the bread cubes and remaining cheese over the salad.
  10. Serve.

Crispy Chicken Strips Recipe

CRISPY CHICKEN STRIPS RECIPE

Ingredients:

  • 1 egg, beaten
  • 1 cup milk
  • 2 cups all-purpose flour
  • 2 1/2 teaspoons salt
  • 3/4 teaspoon pepper
  • 3/4 teaspoon MSG (optional)
  • 1/8 teaspoon paprika
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon baking powder

Procedures:

  1. Cut 6 chicken Breasts into strips, or you can buy chicken tenders in the store. Marinate them overnight .
  2. Preheat the shortening in a deep-fryer to 350 degrees.
  3. Beat 1 egg and 1 cup of milk. Dip the chicken into the egg mixture.
  4. Dip the the chicken into the coating and then double dip.
  5. Fry in fryer a few at a time till they are golden brown about 5 minutes or until they float.
  6. Remove the chicken to a rack and allow to drain for 5 minutes.
  7. Serve.

Sisig a la eKusinero

After having some talks with friends about the abrupt increase of business permit fees in our area, i decided to take a walk going home. While walking, i’ve noticed some people lining up in a meat shop. So, i decided to buy some for our lunch.

While in the queue, i was thinking of what food to cook. I noticed the pork’s face hanging and it looks clean. Then, i recalled the sisig from Angeles, Pampanga which i thought of giving a try. So, i bought half of the pork’s face together with its ears and nose. I also bought some chicken liver.

What i did is clean the pork by shaving the skin. Then, we grill the pork’s face till golden brown. Boil the chix liver till tender. Then, we add some pepper, salt, onion and lime jiuce. Spice it up with some red chillies and voilah!! Sisig a la eKusinero.

Ingredients:

  • 1 kilo pork’s face with ear and nose
  • 1/4 kilo chicken liver
  • 10 pcs. kalamansi
  • 4 pcs. onion, chopped
  • salt and pepper to taste
  • 3 pcs red chillies (siling labuyo), chopped (optional)

Procedures:

  1. Clean the pork’s face thoroughly. Shave the skin. Drain.
  2. Grill the pork till golden brown.
  3. While grilling, boil the chicken liver to tender. Drain and set aside.
  4. Chop the pork finely into 1/4 inch square. Also, chop the chicken liver and the onions.
  5. In a bowl, mix the pork, liver, onion and lime juice. Add some salt and pepper. Mix well.
  6. Spice up with some chillies (sili) and serve!
