Pork Stir Fry with Garlic Rice Recipe

Ingredients:

  • 250 gms pork, cut in strips
  • 125 gms green beans, sliced thinly
  • 1 pc carrot, sliced thinly
  • 1 red bell pepper, sliced thinly
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp corn starch
  • 1 tbsp garlic, minced
  • 2 tbsp cooking wine
  • ground pepper to taste
  • cooking oil

Procedures:

  1. In a bowl, mix pork strips and corn starch. Coat well.
  2. Heat oil in a frying pan then add the pork and stir fry for a few minutes.
  3. Add garlic and fry for a few seconds then add the green beans and carrots and stir fry for a few seconds.
  4. Add soy sauce, cooking wine and ground pepper and stir fry again for a few seconds.
  5. Add bell pepper and oyster sauce, toss well and stir fry for a few seconds.
  6. Serve hot with garlic rice.

Thai Chicken Stir Fry Recipe

I love quick, easy and healthy cooking and I'm sure this Thai stir fry will keep your hunger away in just a few minutes.

This light chicken stir-fry recipe definitely has the look and taste of Thai cuisine with its colorful assortment of vegetables and bold flavorings of fish sauce, crushed red pepper, garlic, ginger, and peanuts. Knowing the proper method for mincing garlic is beneficial when preparing this tasty stir-fry.

Ingredients

  • 1 pound skinless, boneless chicken breast halves
  • 1/4 cup rice wine
  • 3 tablespoons reduced-sodium soy sauce
  • 2 tablespoons water
  • 1 tablespoon fish sauce (optional)
  • 1-1/2 teaspoons cornstarch
  • 1/2 teaspoon crushed red pepper
  • 1 tablespoon cooking oil
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1-1/2 cups bias-sliced carrots (3 medium)
  • 2 cups fresh pea pods, tips and strings removed, or one 6-ounce  package frozen pea pods, thawed
  • 4 green onions, bias-sliced into 1-inch pieces
  • 1/3 cup dry roasted peanuts
  • 2 cups hot cooked rice
  • Chopped peanuts (optional)

Procedures

  1. Cut chicken into 1-inch pieces; set aside.
  2. For sauce, stir together rice wine, soy sauce, water, fish sauce, if using, cornstarch, and red pepper. Set aside.
  3. Pour oil into a wok or large skillet. (If necessary, add more oil during cooking.) Heat over medium-high heat. Add ginger and garlic to wok; cook and stir for 15 seconds. Add carrot; cook and stir for 2 minutes. Add pea pods and green onion; cook and stir for 2 to 3 minutes more or until vegetables are crisp-tender. Remove vegetables from wok.
  4. Add half the chicken to hot wok. Cook and stir for 3 to 4 minutes or until chicken is no longer pink. Remove from wok.
  5. Repeat with remaining chicken. Return all chicken to wok.
  6. Push chicken from center of wok. Stir sauce; add to center of wok. Cook and stir until thickened and bubbly. Return vegetables to wok. Stir in 1/3 cup peanuts. Cook and stir for 1 to 2 minutes more or until heated through.
  7. Serve with rice. If desired, sprinkle with additional chopped peanuts.

Garlic, scientifically known as Allium sativum L., is one of the most important food seasoning in the world. However, because of its many other uses, demand of this crop is continuously increasing.

Aside from being an indispensable cooking ingredient, garlic is also used to cure athlete’s foot and hypertension. It is used in preparation of drugs, insecticide and explosives.

In general, a stronger tasting clove of garlic has more sulphur content and hence more medicinal value it’s likely to have. Some people have suggested that organically grown garlic tends towards a higher sulphur level and hence greater benefit to health. Organic garlic certainly tastes better so whenever possible its better to buy whether or not it’s best for your health.

In cooking, garlic adds potent flavor to a host of dishes. Diced or coarsely chopped garlic works well in sautés, soups and stews, while minced garlic is best for vinaigrettes and other light sauces.

Here are tips for buying, storing and preparing garlic:

  • Buy firm, dry garlic with paper-like skin. Avoid bulbs that are soft, wet or contain green sprouts, all surefire signs the bulb is past its prime.
  • Always store garlic away from other foods that will pick up its pungent smell. Stored in a paper bag in a cool, dry place, garlic will keep at least a month. Once cloves are broken from the bulb, they keep up to 10 days.
  • Use your hands to peel the papery skin off the bulb before breaking away the individual cloves.
  • To remove skin, place the flat side of a chef’s knife on top of the clove. Use pressure from the palm of your hand to rush the love, releasing the powerful flavor and scent. After the clove is crushed, it’s easy to pluck off the skin. Discard.
  • To chop, place the flattened clove on a cutting board. Use a rocking motion with a chef knife to cut the clove into pieces. To dice into smaller pieces, continue rocking the knife, cutting the pieces into even small pieces.
  • The easiest way to mince garlic, or turn it into a paste-like consistency, is to use a garlic press. Place several unpeeled garlic cloves into the pocket and firmly press the handles together.

Berry-Best Salad

Ingredients:

  • 1/4 cup orange juice
  • 1 tablespoon salad oil
  • 2 teaspoons honey mustard or Dijon-style mustard
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 4 cups torn lettuce
  • 1-1/2 cups fresh blueberries, raspberries, quartered strawberries, and/or canned mandarin orange sections, drained
  • 2 tablespoons bite-size cheddar fish-shaped or pretzel crackers or 1 tablespoon shelled sunflower seeds

Procedures:

  1. For dressing, in a screw-top jar combine orange juice, oil, mustard, sugar, and salt. Cover and shake until combined. Place lettuce in medium bowl. Drizzle with dressing; toss to coat. Divide lettuce among 4 plates.
  2. Arrange fruit on lettuce. Sprinkle with crackers. Serve immediately. Makes 4 side-dish servings.

Ginger Garlic Green Beans Recipe

Ginger Garlic Green Beans

Ingredients:

  • 1 pound green beans, trimmed
  • 3 garlic cloves
  • 1 tablespoon soy sauce
  • 1 tablespoon grated peeled ginger
  • 2 teaspoons rice vinegar (not seasoned)
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon Asian sesame oil
  • 1 1/2 teaspoon sesame seeds, toasted

Procedures:

  1. Cook beans in a 6-quart pot of boiling well-salted water, uncovered, until just tender, 6 to 7 minutes. Drain in a colander, then plunge into an ice bath to stop cooking. Drain beans and pat dry.
  2. Meanwhile, mince and mash garlic to a paste with a pinch of salt, then stir together with soy sauce, ginger, vinegar, and oils in a large bowl.
  3. Add beans and toss.
  4. Serve sprinkled with sesame seeds.

Kilawing Tanigue Recipe

Ingredients:

  • 1 kilo tanigue (spanish mackerel), cut into 1/2 inch cube
  • 1 cup white vinegar
  • 1 thumb size ginger, peeled then minced
  • 1 or 2 pcs. siling labuyo, sliced thinly crosswise
  • 1 tbsp rock salt
  • 5 pcs. calamansi, extract juice
  • 1/4 cup coconut cream, optional

Procedure:

  1. In a large bowl, marinate tanigue cubes in vinegar. When the cubes turn opaque, gently squeeze out liquid and place fish cubes in another glass bowl. Discard the liquid.
  2. Toss in the ginger and siling labuyo (red chili). Add salt and mix well.
  3. Pour calamansi juice into the mixture.
  4. Taste and adjust seasoning.
  5. Pour in the coconut cream. Mix well.
  6. Serve

Sinigang na Hipon (Shrimp in Sour Soup) Recipe

Sinigang is a Philippine dish famous for the variety of ingredients. Though considered a soup, it is not eaten as is, but rather combined as a viand with rice. Sinigang is typically sour.

Sinigang often incorporates stewed fish, pork, chicken, shrimp, or beef. Sinigang’s characteristic taste is attributed to the ingredient that gives its sour taste, not to the meat’s flavor.

Meat is stewed with tamarind (which provides the sourness), green pepper, tomato, and onion. Other vegetables cooked in sinigang may include okra, taro corms, labanos, kangkong, sitaw and egg plant.

Ingredients:

  • 1/2 Kilo Hipon (Shrimp)
  • 12 pcs Tamarind (Sampaloc)
  • 1 big Onion (diced)
  • 6 big tomatoes (quartered)
  • 2 pcs Radish (sliced)
  • 1 bundle Sitaw Stringbeans (cut into 2″ long)
  • 1 bundle Kangkong (cut into 2″ long)
  • Salt and Patis to taste
  • 6 cups water

Procedures:

  1. Boil tamarind to soften. Pound and strain all juices and set aside.
  2. In a casserole, bring shrimp to a boil, lower fire and simmer.
  3. Add onions, tomatoes and tamarind juice.
  4. Add in all the vegetables.
  5. Season with salt and Patis to taste.
  6. Serve hot.

  • 6 cups cooked rice
  • 1 cup Chinese chorizo, chopped
  • 1 onion, chopped

  • ¼ cabbage, finely chopped
  • ¼ cup oyster sauce
  • ¼ cup green peas
  • 2 tbsp sesame oil
  • Salt and pepper to taste
  • 3 tbsp oil, for frying

Procedures:

  1. In a deep wok, heat oil.
  2. Stir fry onion, garlic and chorizo.
  3. Add celery, cabbage, carrots and green peas and sauté for a few minutes.
  4. Add the cooked rice and stir well.
  5. Add the oyster sauce and sesame oil. Toss very well.
  6. Season with salt and pepper accordingly.
  7. Serve hot.
